Meghan Telpner's Foods for Healing

I was talking to some people in my office the other day about the way that I eat and the reasons why I do it. As I was talking about getting rid of gluten and dairy, I realize that it has been 4 years since my diagnosis with Crohn's Disease and more than three and a half years since I transitioned my diet to a version of what it is now.

Food has played a huge role in my healing, and I know that I wouldn't be where I am today had I not made the decision to start seeing a naturopath rather than injecting myself with lots of medication. Along the way I had people tell me I was crazy, making restrictive choices and that I should probably eat a steak once in awhile to stay healthy. I decided to ignore those people and do what made sense to me, and four years later, I am symptom-free. Not too shabby for a disease that has no cure. 

As I've mentioned many times before, someone who has played a HUGE role in this journey has been my favourite nutritionista, Meghan Telpner. I discovered Meghan's blog soon after my diagnosis, treated myself to some cooking classes and she's been a wonderful, sparkly fixture in my life ever since. It's been incredible to watch and be a part of so many of her amazing projects and initiatives, and I was even more excited for her to announce her brilliant new Foods for Healing course.

I would say my mom. She has made a lot of health changes and walked with me to find anti-inflammatory meals that taste great.

My mom continues to be my biggest inspiration in how she faces challenges in her life! My food/health inspiration is Meghan herself; I'm really amazing at how she has taken control of her disease and is also helping others do the same (not trying to suck up I swear).

Right now, I'd have to say my dad. He passed away suddenly in February and I'm still trying to come to terms with the loss while adjusting to my role as a mom to an infant and dealing a variety of inflammatory issues. My dad lived life to the fullest; he worked hard and loved us – his family – just as much. He was kind to others, generous and forgiving. He didn’t always take care of himself and I think it was a huge factor in his death. Who my dad is – was - inspires me to this day – life is short, precious and while living, you need to take care of/love yourself and others. I wish every single day he did the latter (take care of himself) but I know he’d want me to do the same for my daughter.

Definitely my mom... she raised five kids, dealt with the passing of my father, and started a new career at age 50. She's truly an amazing woman.

On the health front, it was Meghan who inspired me to reach within and make the changes that I needed to make in order to be a healthier more fabulous version of myself. I discovered Meghan and her website through your blog, Ashley. This discovery came not too long after I received a warning about high blood pressure from my doctor, and the word “stroke” was thrown out there. That freaked the heck out of me and I knew that I needed to make some changes. Meghan helped me see that healthy, clean eating is accessible, affordable, and delicious. And, that the power to make changes lay within me. I truly believe that my life has changed as a result of being introduced to Meghan and treating myself to her courses and classes.

I would say my aunt. She's always been a model of a strong and independent woman. She's gone through so much as a person. She immigrated over to Canada from Guyana and soon after became a widow and a single mother of 3 boys. She was also the sponsor for my dad a ad aging grandparents. Despite all of the hardships and pressures she's gone through, she's always remained humble and selfless. I've always admired her for being so strong and positive through it all. She's always been that glue that holds the family close by making dinners and food for us over the holidays.
Today's she's retired and a proud grandma of 3. It's nice to see she's finally having time to travel and relax, while she still maintains her daily exercise routine and eating healthier.

My sister has been inspiring my adventurous and outside the box food choices since she turned vegetarian in 1994. From her first forays into veggie spaghetti with tofu and tomato sauce, to raw desserts and everything in between, she has been sending me recipes and making me things that I would not have normally made. As a result, I have a pretty expansive vegetarian palette, and enjoy cooking new and interesting things. In addition, when I was going through my food allergy testing, she was there helping me find nutritious substitutes for the things I had to avoid.
I am very happy to be drinking green smoothies, baking with chia seeds and making kale chips in my oven. And I have my sister to thank for leading the way.

I would say the blogging community has inspired me the most. There are many people being so vulnerable with their issues and posting about what works, what doesn't, games plans, recipes & etc. I'm inspired to try things I'd never heard of...like Irish Moss, exercise methods...like plank workouts, meal ideas, switching out health and beauty care products for safer ones. On and on and on...
